Mascot's Type II Caramel Colours are produced from carbohydrates that are heated in the presence of sulphite compounds. No ammonium compounds are used. It is spirit soluble, red tone, and a negative ionic charge caramel colour. It is commonly used in tea, whisky, and brandy.
